CHICKEN 65 by Madras Curry

Chicken 65 – Delicious, juicy, deep-fried spicy piece of chicken meat bursting with the flavor of chilly and Indian spices is one of the most popular starters in a south Indian restaurant menu. How the name Chicken 65 came? Some say it has to do with the fact that it is 65th dish number in the menu of the military canteen in Chennai formerly called Madras and some say 65 was the number of spices or chilies used. Rest assured, chicken 65 by any other name would be just as scintillating, fiery and hot. Regardless of the thousand stories I simply feel it’s delicious every single time I taste. There exist many versions of this dish, and today I am posting Restaurant style-dry version with no sauce, just the tempering. I also make with a saucy version which I will post it in the future sometime. Well, stories apart let take a look at how you whip up this quick dish in no time. Give a try, they’ll be sure to be a hit with both kids and adults alike. Enjoy! Ingredients to Marinate: Yogurt/Curd 3 Table Spoon Ginger Garlic Paste 1 Table Spoon Garam Masala 1 Teaspoon Corriander Powder 1 Teaspoon Chilli Powder Teaspoon Turmeric Powder 1 Pinch Corn Flour 1 Table Spoon One egg Beaten Add Required salt Method to Marinate the chicken with the Paste/Masala. Add all the above ingredients in a bowl and mix well. Now your chicken Paste/Masala is ready to be mixed with chicken for marination. Add Boneless Chicken 1/2 kg (Thighs or Breast, Cut into small bite-size pieces) ( Preferably tender chicken thigh part works best) in the Chicken Paste/Masala and, marinate for approximately 30 minutes to 60 minutes. Make sure all the chicken pieces are well marinated for at least 30 minutes as mentioned above to get a juicy and crunchy chicken. Cooking Process Take a pan and add the required oil to deep fry. After the oil gets hot add the marinated chicken pieces into the oil and deep fry. Fry the chicken till golden brown. ( As shown in the video ) Authentic South Indian Starter Chicken 65 is ready now and you can transfer into a plate and serve. For garnishing add lemon piece and onion as shown on the cover page.
